Chilaquiles (Casserole)Serves 8
• 1 lb. Norbest taco seasoned ground turkey • ½ cup water • 3 cups chunky salsa • 8 oz. corn tortilla chips • 6 oz. shredded cheddar cheese • 1 large tomato, diced • cilantro (for garnish) • sour cream/guacamole (optional)
A traditional Mexican dish - chilaquiles is an irresistible combination of spice, crunch, and creaminess.
1 ) Preheat the oven to 350° F. 2 ) Put the water, taco meat and salsa into a large pan and bring to a simmer over low heat, breaking up the turkey as it cooks. 3 ) When the turkey is cooked through and crumbled, stir in the chips, tossing them until they are coated in the mixture and softened slightl. 4 ) Remove the pan from the heat and stir in 2/3 of the cheese and the diced tomato. 5 ) Transfer the mixture to an ovenproof casserole dish and top with the remaining cheese. 6 ) Place the dish into the preheated oven for 10 minutes until cheese is bubbly and edges are crisp and golden. 7 ) Garnish with minced cilantro. Serve with optional sour cream and/or guacamole.
