Onion Marmalade Glazed Turkey Roast

Onion Marmalade Glazed Turkey RoastServes 4

INGREDIENTS

• Norbest Turkey Breast Roast
• 4 Tbsp. butter
• 4 medium yellow onions- sliced thinly
• 3 cups red wine – fruit forward but not sweet (pinot noir, sangiovese or pick something that is described with dark ripe fruit notes on the label)
• 4 cups brown turkey stock
• 2 bay leaves
• 1 cup red currant jelly
• ½ Tbsp. fresh coarse ground black pepper
• Salt to taste

DIRECTIONS

Process 1 ) Melt the butter over low heat in a large bottom sauce pan. Add the onions and cook them stirring frequently to avoid scorching until they are well caramelized and deep brown in color. (If the onions start to burn before developing a caramel during this process, you can add a few Tbsps. of water at a time to help control the moisture and temperature of the pan.) 2 ) Deglaze the pan with the red wine and reduce it until it is almost dry. The onions should look wet but not like they are submerged in liquid. 3 ) Add the Turkey stock, bay leaves and the black pepper lower the heat and allow to simmer until the sauce reduces to one third its volume - about 30 minutes. 4 ) Add the currant jelly and continue to reduce the mixture by half its volume until the glaze will cling to and coat a metal spoon. Adjust seasoning with salt if needed. 5 ) Remove from heat and allow the marmalade to come to room temperature.   To Glaze your Norbest Sweetheart Turkey Roast; 1 ) Cook your roast low and slow in a preheated 325°F oven. Don’t open the door or baste, just let it languish in its perfect turkey sauna! Cook it until an instant read thermometer registers 150°F when inserted into the middle of the roast. Remove it from the oven and increase the oven temperature to 450°F. 2 ) Spoon the Onion Marmalade Glaze generously over the turkey ensuring the sides also get coated and put it back in the oven for 15 minutes. Remove from oven and spoon another coating of the glaze over the turkey and cook for another 15 minutes. 3 ) Remove from the oven and allow the roast to rest for 20 minutes before carving. 4 ) Serve the remaining glaze on the side as a fantastic alternative to cranberry sauce. For gluten free guests it is a wonderfully sweet, savory and peppery sauce for the turkey.
