Reuben Turkey Burger Serves 4

INGREDIENTS


• 1 medium head of red cabbage


• 1-½ tsp. table salt


• 3 tsp. each granulated sugar


• ground caraway seeds


• 1/4 C vinegar


• 4 Tbsp. Russian dressing


• 4 Norbest turkey burger patties


• 4 slices low-fat Swiss cheese


• 4 oz. whole grain mustard


• 4 kaiser rolls

A delicious Reuben Turkey Burger

DIRECTIONS

1 ) For the pickled cabbage: Slice the cabbage thinly and place in a large bowl. 2 ) Sprinkle with the salt, sugar and ground caraway seeds. 3 ) Toss cabbage to coat with the seasonings and allow to sit for at least 30 minutes up to an hour. 4 ) Add vinegar to seasoned cabbage and mix thoroughly to combine. Pickled cabbage is best prepared a few hours up to a day ahead but can be used immediately if desired. 5 ) Season the turkey burger with pepper and place in an oiled pre-heated frying pan. 6 ) Cook the turkey burger until it reaches an internal temperature of 165° F. 7 ) Place the slice of Swiss cheese over the hot burger and allow it to melt. 8 ) Toast the cut side of the kaiser roll in the same pan the burgers were cooked in. 9 ) Assemble the burger: spread the Russian Dressing on the bottom of the kaiser roll, pile the pickled cabbage on top, followed by the cooked burger with the melted Swiss cheese. 10 ) Top it all with a generous dollop of whole grain mustard and the top of the kaiser roll.
