• ½ cup fresh ginger, thinly sliced
• 1 Norbest turkey (Avg. 15 lbs)
• 1 Tbsp. kosher salt
• 2 tsp freshly ground pepper
• 1 ½ tsp Chinese five-spice powder
• 6 scallions cut into 2-inch lengths
• 4 Tbsp corn starch
• ¼ cup cranberry juice
• Toasted sesame seeds
• 2 cups Tamari

• 2 lbs extra firm tofu
• 1/3 cup vegetable oil
• 6 cups cooked medium grain brown rice
• 1 cup Tamari (or soy sauce if gluten is not
an issue)
• 2 lbs frozen peas & diced carrots
• 3 medium yellow onions, diced
• 1 dozen large eggs, lightly beaten
• 1 large head Napa cabbage, chopped
• 6 green onions, sliced
