Turkey Sausage Clam BakeServes 4

INGREDIENTS

• 2 Norbest Turkey Sausage Links
• 1 cup chicken broth
• 1 tsp crab boil seasoning
• 4 small new potatoes, cut in half
• 1 small onion, cut in quarters
• 1 red bell pepper, seeds removed, sliced
• 1 ear corn on the cob, cut into 1” slices
• 1 lb small steamer clams (optional)
• ¼ cup flat leaf parsley, coarsely
• 1 lemon
• Salt and fresh pepper (to taste)

• Wide Heavy Duty Aluminum Foil
• 13” x 9” baking pan (optional)

DIRECTIONS

1 ) Place the turkey links, chicken broth, crab boil seasoning, and potatoes in a pot and bring to a boil. 2 ) Reduce to a simmer and cook until the internal temperature of the sausages reaches 165°F on a meat thermometer. Remove pot from the heat. 4 ) Preheat your Grill or Oven to 400°F 5 ) Create a pouch with the aluminum foil by lining a 13” x 9” baking pan with a double layer of foil. 6 ) Arrange onions, pepper, corn, and the clams in the foil lined pan and sprinkle parsley over all. Remove potatoes from the pot and layer them over the vegetables and clams. Remove the turkey sausage from the pot and cut into 1 inch lengths layer over potatoes. Pour the broth that the sausage was cooked in on over the rest of the ingredients. 7 ) Cover the mixture with another double layer of foil and fold the edges of the top and bottom layers together to form a sturdy seal. (Hint: Fold the bottom layers of foil up and over the top layers to keep the liquid in.) 8 ) Place the pouch into the preheated oven or onto the hottest part of your grill and cook until the packet puffs up and steam is escaping from the seams. Remove from the heat and carefully cut a slit in the top and peel open. 9 ) Finish with a squeeze of lemon and serve. TIP: You can forgo the foil all together and make this a one pot meal on the stove or side burner of your grill or camp stove. Just bring the sausage and potatoes to a boil and add everything else to the pot! Cook until the clams open!
