Turkey Sausage StuffingServes 10-12

INGREDIENTS



4 tablespoons (1/2 stick) unsalted butter

1 1/2 lb. Norbest turkey sausage

2 yellow onions, diced

3 large leeks

3 garlic cloves, minced

7 onces cremini mushrooms, quartered

1 teaspoon chopped thyme

1 1/2 teaspoon rubbed sage

Kosher salt and ground pepper to taste

1/4 cup dry cooking sherry

1 cup peeled and roasted chestnuts, halved

1 lb. Italian Focaccia bread (dried)

2 tablespoon chopped fresh Italian Parsley

3-4 cup warmed chicken stock

A delicious and unique stuffing for any time of the year! 

DIRECTIONS

  1. Preheat oven to 375 degrees F.
  2. Grease 3-qt baking dish with 1 teaspoon butter.
  3. In a large fry pan, over medium high heat, crumble and cook sausage until light brown. Cool on plate.
  4. In the same pan over medium heat, melt 3 tablespoons butter. Saute onions and leeks 10-12 minutes or until transparent.
  5. Add garlic, mushrooms, thyme, sage, 2 teaspoons salt and pepper, cook 12 minutes. Stir in cooking sherry.
  6. In a very large bowl, combine sausage, vegetables, chestnuts, focaccia bread and parsley. Stir in stock 1/2 cup at a time, be sure bread croutons absorb it completely.
  7. Transfer to baking dish. Cover with foil, bake 20 minutes.
  8. Uncover bake 25-30 minutes.
