Turkey Lo Mein

Ingredients
  

  • 2 cups strips of cooked Norbest Turkey Breast
  • 1 ½ cups cups turkey broth
  • ½ tsp. sugar
  • ¼ tsp. ginger
  • tsp. garlic powder
  • 1 16 oz. package frozen mixed broccoli, carrots, water chestnuts and red peppers
  • 1 4 oz. package uncooked angel hair pasta or vermicelli, broken up (1 1/2 cups)
  • 2 tsp. cornstarch
  • 2 tbsp. water

Instructions
 

  • In large skillet, combine turkey, turkey broth, sugar, ginger, garlic powder and vegetables. Bring to a boil. Stir in pasta. Reduce heat; cover and simmer 5-8 minutes or until pasta is tender. In small bowl, combine cornstarch and water; blend until smooth. Stir into hot mixture in skillet. Cook 1 minute or until thickened, stirring constantly. If desired, serve with soy sauce. Microwave directions: In 3-quart microwave-safe casserole, combine turkey, turkey broth, sugar, ginger garlic powder and vegetables; cover tightly. Microwave on HIGH for 6-7 minutes or until mixture comes to a boil, stirring once halfway through cooking. Stir in pasta; cover tightly. Microwave on HIGH for 6-7 minutes or until pasta is tender. In small bowl, combine cornstarch and water; blend until smooth. Stir into hot mixture in casserole. Microwave on HIGH for 1-2 minutes or until thickened, stirring once during cooking.

Turkey Cooking Times

When selecting a turkey to serve to a group, estimate 1.5 pounds per person. For example, if you are serving a group of 10 people, choose a bird that is 15 to 20 pounds. If you choose a smaller bird that weighs less than 12 pounds, those birds have a smaller meat-to-bone ratio, so calculate two pounds per person.
