Ingredients
  

  • 4 large red onions, sliced thinly
  • ¾ cup lime juice
  • ¼ cup garlic, minced
  • 1 tbsp. dried oregano
  • 1 tbsp. ground cumin
  • 1 tbsp. smoked paprika
  • ¾ cup vegetable oil
  • 12 lbs boneless, skinless Norbest Turkey breast meat, cut into strips
  • 12 sweet bell peppers, cut into strips
  • 100 4 in. corn tortillas
  • 12 sweet bell peppers, cut into strips
  • optional: sour cream, cilantro, lime

Instructions
 

  • Combine sliced red onion with lime juice, garlic, oregano, cumin and smoked paprika. Add Turkey and marinate for 1 hour. Heat 1 tablespoon of oil in a large skillet over medium high heat. Add the turkey and onion marinade. Cook until turkey strips are cooked almost all the way through and the onions begin to brown Add the peppers and sauté for 1 minute. Peppers should remain crisp.
  • Serve immediately with corn tortillas and (optional) sour cream, cilantro, and lime.
