Turkey Lettuce Wraps

Ingredients
- 1 ½ cups olive oil
- 25 lbs pounds Norbest ground turkey
- 1 lbs garlic cloves, minced
- 7 lbs onions, diced
- 6 ¼ cups hoisin sauce
- 3 cups soy sauce
- 1 ½ cups rice wine vinegar
- 1 ½ cups freshly grated ginger
- ½ cups Sriracha
- 2 10# cans whole water chestnuts, drained and diced
- 50 green onions, thinly sliced
- 25 heads butter lettuce
Instructions
- Heat olive oil in a saucepan over medium high heat. Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the turkey as it cooks. Drain excess fat.Stir in garlic and onion; cook until onions have become translucent, about 3 minutes. Stir in hoisin sauce, soy sauce, rice wine vinegar, ginger, and Sriracha and cook 1-2 minutes more. Mix in water chestnuts and green onions.To serve, spoon several tablespoons of the turkey mixture into the center of a lettuce leaf, taco-style.
